Classic light cinnamon flavour that's always a crowd pleaser.
As always we are going to get right into the recipe. No pointless scrolling here!

Equipment required:
kitchen mixer or hand mixer
spatula
measuring cups
baking sheet
parchment paper
Optional cookie scoop (ice cream scoop)
ingredients:
1 cup - butter (softened)
1 1/2 cup - sugar
2 - large eggs
1 teaspoon - vanilla
1 teaspoon - baking soda
1/4 teaspoon - salt
2 3/4 cup - flour
FOR ROLLING THE COOKIES IN: 1 cup sugar + 2 tablespoons of cinnamon
DIRECTIONS:
MAKE COOKIE BASE | Kitchen Aid or Handmixer
Whisk attachment | Cream butter until pale and fluffy | about 3 minutes
Add sugar | cream together about 2 minutes
Add eggs one at time | cream together about 1 minute
Add baking soda, salt, and vanilla
Paddle attachment | add flour | mix until just combined
Roll cookie dough into approx. 2" balls
Roll each cookie ball in cinnamon sugar before placing on parchment paper prepared baking pan - do not flatten
BAKE:
350F | 8 - 12 minutes | cookies will be flattened to cookie shape and have slightly brown edges
TIPS:
Do not overmix
One batch will make about 12-15 cookies. Enjoy!
